ANANAS SAMBHARE

(PINEAPPLE CURRY)

A Pathare Prabhu meal is incomplete without a coconut milk based curry……. No Pathare Prabhu wedding feast is complete without this wonderful sweet & spicy Ananas Sambhare…….. Ananas means pineapple…… This delicious fruit contains disease fighting antioxidants, helps in digestion, suppresses inflammation, boosts immunity, etc……. Coconut milk has many benefits too…… It strengthens the bones, helps prevent anemia, improves digestion, boosts the immune system, has antibacterial, antiviral & antifungal properties, etc.

INGREDIENTS : 200 gms chopped pineapple, 2 green chillies, 1/4 tsp turmeric powder, a pinch of asafoetida, 1 tbsp besan (gram flour), 1 cup coconut milk, 3 tsp sugar, Salt to taste, water, 1 tsp oil.

DIRECTIONS : Chop the pineapple……. Slit one green chilli…. Chop the other green chilli in thin slices………20180819_002343.jpg Mix besan with 3 tbsp water to make thick smooth paste……20180819_002450.jpg Heat oil on a medium flame…… Add slit green chilli and a pinch of asafoetida….. After a few seconds add the pineapple pieces & turmeric powder……20180819_002606.jpg Sauté…….. Add 1 & 1/2 cup water and stir……..20180819_002728.jpg Simmer till pineapple pieces soften…….. Mix in sugar and salt…..20180813_132328.jpg Simmer….. Now mix in the besan paste stirring constantly but lightly to prevent any lump formation………20180819_002959.jpg Add coconut milk…..20180813_132607.jpg Stir…..20180819_003302.jpg The moment it simmers, put off the flame…….. Garnish with thinly sliced green chillies…….. Serve hot with steamed rice.

NOTES : Adjust green chillies according to taste……. Can add cashewnuts – for this add cashewnuts while sautéing pineapple pieces…… One can adjust consistency of the gravy, according to taste, by increasing/decreasing water/coconut milk.

HIRVE KAALVAN

(FRESH CORIANDER & COCONUT CURRY)

Hirve Kaalvan is a mild and creamy curry…… This curry is very easy to make…… It goes very well with fried items (vegetables, fish,etc.) and rice…… Can be used as a dip…… Coriander is a herb with various health benefits…… It aids in digestion, regulates blood pressure, lowers cholesterol levels, maintains normal blood sugar levels, etc. 20180819_002207.jpg

INGREDIENTS : 1 small bunch of Coriander leaves, 1/4 cup grated coconut, 1-2 green chillies, a pinch of turmeric powder, 1 tsp cumin seeds, 200 ml coconut milk, salt to taste, 1 tsp rice flour.

DIRECTIONS : Mix rice flour in 1/4 cup coconut milk stirring continuously……… 20180819_001357.jpgAdd this to rest of the coconut milk…… Whisk to make sure there are no lumps…… 20180819_001042.jpgGrind coriander leaves, grated coconut, green chillies, cumin and salt to a fine paste……20180819_001211.jpgPour the rice flour mixed coconut milk in a pan and heat it on a low flame continuously stirring….. Add a pinch of turmeric powder……20180819_001525.jpgStir……. Add the ground green paste…….20180813_134605.jpg Stir continuously…… 20180819_001844.jpgWhen it is about to come to a boil, turn off the gas…… Serve with steaming hot rice and fried fish/vegetables.

NOTE : A pinch of turmeric brings out the green colour of the curry…… Green chillies can be increased according to taste….. Can be served with a slice of lemon.

TAVSALI

Cucumber Cake is called by East Indian Community as Tavsali……. Tavsali gets its name from the Konkani word Tavshe……. Tavshe means cucumber……. Very easy to make, the texture of Tavsali is light, moist and soft……. Cucumber cake is generally made from large and ripe yellow cucumbers.

INGREDIENTS : 1 large cucumber, 1 cup semolina, 1 cup jaggery, 3/4 cup fresh grated coconut, 4-5 green cardamoms, cashew nuts as needed, coconut oil/ghee.

DIRECTIONS : Wash and peel the yellow cucumber…… Cut into half…… Remove the seeds….. Grate the cucumber…… Don’t discard the cucumber juice…… Keep aside….. In the meantime, roast the semolina till fragrant….. Keep aside…. Powder the cardamoms……. Chop few cashew nuts.

Take a bowl……. Mix roasted semolina, grated cucumber with all its juice, freshly grated coconut, jaggery, cardamom powder and chopped cashew nuts…… Mix well to get a batter of medium consistency without lumps……. Keep aside for at least 1 hour.

Take a container….. Grease with ghee……. Pour the batter…….. Heat some water in the pressure cooker…… Keep the container containing batter in the pressure cooker…….20180427_004229.jpg Cover the container………20180427_004410.jpg Cover pressure cooker with lid…….20180408_115910.jpg Steam for 30-40 mins……. Check whether it is done by inserting a knife….. One can bake Tavsali instead of steaming it……. Bake in preheated oven at 180 degrees for 30-45 mins.

NOTE : If yellow cucumber is not available, then one can use regular green cucumbers……. If using green cucumbers, one does not need to remove seeds…… Increase/decrease jaggery according to the sweetness required……. If the consistency of the batter is too thick, one can add a little milk/coconut milk…… On can use steamer or Electric cooker too.

CHITTAPS

Chittaps are rich, soft, porous, delicious pancakes….. These are perfect accompaniment to any gravy items….. The East Indian community prepare Chittaps either with a mixture of rice flour & maida OR rice flour & wheat flour, coconut milk, egg and yeast.

INGREDIENTS : 2 1/2 cups rice flour, 1 1/4 cups maida (white flour), 1/2 cup coconut milk, 1/2 cup sugar, salt to taste, 2tsp yeast, 1 egg, oil.

DIRECTIONS : In about 1 tbsp lukewarm water stir in yeast with a pinch of sugar…… Set aside for some time….. Mix rice flour, maida, coconut milk, sugar, salt, yeast mix and egg well….. A little water can be added, if required……Set aside to ferment for at least 2-3 hours….. Stir batter again…. If required, add little more coconut milk to get pouring consistency.20180227_142027.jpg
Heat a nonstick pan….. Lightly grease with oil…. Pour batter with a ladle on the pan, softly spread it to form a pancake……20180227_141024.jpg Cover (to retain the heat) and cook on slow fire for a minute or two…..20180227_141144.jpg Flip….. Cook uncovered for a few seconds till done…..20180227_141246.jpg One side will be light brown and the other side whitish…… Serve hot….. Continue this procedure till all the batter is used…… Goes very well with veg / non veg gravies.

NOTE : Sugar can be adjusted according to taste….. Increase coconut milk, if required, to get pouring consistency…….East Indian community use cast iron chittap pan.

BIRIYANI CHAMMANTHI

(BIRIYANI CHUTNEY)

Biriyani Chammanthi is a must with biriyani…….Addition of yoghurt brings in the sour element…… Coriander & mint makes this chutney very flavourful…….. Chutneys are normally grounded in Ammikkal, a mortar & pestle, in Kerala homes……

Food processors/Electric grinders are good enough to make these chutneys.

INGREDIENTS : 1 cup grated coconut, 1-2 tbsp yoghurt, few mint leaves, few sprigs coriander, 4 green chillies, 4-8 cloves garlic, 1 tsp ginger(optional), salt to taste.

DIRECTIONS : Grind all the ingredients to a paste…… Serve with Biriyani…….. This is also known as Biriyani Chammanthi.

NOTE : One can increase/ decrease chillies according to taste…….. Similarly sour element can be increased/decreased according to taste.
